  • sugar - 2 c
  • cinnamon
  • eggs - 3 item
  • vanilla - 2 tsp
  • salt - 1 tsp
  • flour - 3 c
  • nutmeg - 3/4 tsp
  • soda - 2 tsp
  • baking powder - 1/4 tsp
  • vegetable oil - 1 c
  • plus 1 Tbsp - 1/4 c
  • applesauce - 1/2 c
  • shredded zucchini - 2 c
  • pecans, chopped - 1 c

How to make zucchini bread:

Combine sugar, oil, eggs and vanilla in large bowl. Beat on medium speed. Add zucchini, applesauce and orange juice; stir well. Combine next 5 ingredients and add to zucchini mixture. Add chopped pecans. Pour into Bundt pan. Bake at 350° for 1 hour and 10 minutes or done when tested.
