Ingredients/Components

  • dried apricots - 3/4 c
  • warm water - 1 c
  • white flour - 3/4 c
  • whole wheat flour - 3/4 c
  • wheat germ - 1/2 c
  • rolled oats - 3/4 c
  • sugar - 2/3 c
  • baking powder - 1 Tbsp
  • baking soda - 1/4 tsp
  • salt - 3/4 tsp
  • cinnamon - 1 tsp
  • freshly ground nutmeg - 1/2 tsp
  • egg, beaten lightly - 1 item
  • melted shortening or oil - 2 Tbsp
  • chopped walnuts - 1/2 3/4

How to make apricot bread:

Soak dried apricots in warm water for 30 minutes. Save water. Sift together flour, wheat germ, rolled oats, sugar, baking powder, baking soda, salt, cinnamon and nutmeg. Add egg, oil, 3/4 cup of the saved apricot water, walnuts and the coarsely chopped apricots. Place batter in a greased loaf pan. Bake at 350° for about 50 minutes or until done. Cool for 10 minutes and remove from pan. Store for 24 hours before serving.
