Apricot bread
Ingredients/Components
- dried apricots - 3/4 c
- warm water - 1 c
- white flour - 3/4 c
- whole wheat flour - 3/4 c
- wheat germ - 1/2 c
- rolled oats - 3/4 c
- sugar - 2/3 c
- baking powder - 1 Tbsp
- baking soda - 1/4 tsp
- salt - 3/4 tsp
- cinnamon - 1 tsp
- freshly ground nutmeg - 1/2 tsp
- egg, beaten lightly - 1 item
- melted shortening or oil - 2 Tbsp
- chopped walnuts - 1/2 3/4
How to make apricot bread:
Soak dried apricots in warm water for 30 minutes. Save water. Sift together flour, wheat germ, rolled oats, sugar, baking powder, baking soda, salt, cinnamon and nutmeg. Add egg, oil, 3/4 cup of the saved apricot water, walnuts and the coarsely chopped apricots. Place batter in a greased loaf pan. Bake at 350° for about 50 minutes or until done.
