Zucchini bread

Ingredients/Components

• eggs - 3 item
• sugar - 2 c
• vegetable oil - 1 c
• vanilla - 1 Tbsp
• loosely coarsely grated zucchini - 2 c
• flour - 2 c
• chopped nuts - 1 c
• grated coconut - 1 c
• cinnamon - 1 Tbsp
• nutmeg - 1 tsp
• baking soda - 2 tsp
• salt - 1 tsp
• baking powder - 1/4 tsp

How to make zucchini bread:

Beat eggs until frothy. Beat in rest of ingredients. Pour into well-greased and floured loaf pans. Bake at 350° for an hour or until done. Stand for 10 minutes and invert pans.
