Zucchini bread

Ingredients/Components

• sugar
• cinnamon - 3 tsp
• eggs - 3 item
• vanilla - 2 tsp
• salt - 1 tsp
• flour - 2 c
• soda - 2 tsp
• baking powder - 1/4 tsp
• vegetable oil - 1 c
• nuts - 1 c
• grated zucchini - 2 c
• raisins - 1 c

How to make zucchini bread:

Beat eggs lightly; stir in oil, sugar, zucchini and vanilla. Mix flour, baking powder, soda, cinnamon and salt. Stir in egg mixture until well blended. Stir in raisins and nuts. Spoon into well-greased loaf pans and bake at 375° until done in center, approximately 1 hour. Yields 1 large or 2 small loaves.
