Ingredients/Components

  • eggs - 3 item
  • oil - 1 c
  • sugar - 2 c
  • vanilla - 2 tsp
  • flour - 3 c
  • baking soda - 2 tsp
  • nutmeg - 3/4 tsp
  • baking powder - 1/4 tsp
  • shredded, unpeeled zucchini - 2 c
  • salt
  • chopped dates - 1 c
  • chopped pecans - 1 c
  • cinnamon

How to make zucchini bread:

Beat eggs, oil, sugar and vanilla until thick. Stir remaining ingredients and mix well. Pour into 2 greased large loaf pans. Bake at 350° for 1 hour or until toothpick comes out clean.
