  • margarine - 1/4 c
  • can cream of chicken soup - 1 3/4
  • grated Cheddar cheese - 1 c
  • medium onion, chopped - 1 item
  • seasoned bread crumbs - 1/2 pkg
  • carrot, grated - 1 item
  • yellow squash, sliced - 1 lb
  • each: salt and pepper or 1 tsp - 1/4 tsp

How to make yellow squash casserole:

Microwave squash, onion and grated carrot in an 8-inch microwave-safe pan on High, covered, for 6 to 8 minutes until tender (add a small amount of water if necessary). Drain and add soup, eggs, cheese, margarine and seasonings. Mix to blend. Cover tightly with plastic wrap and cook for 6 to 8 minutes on High. Top with seasoned bread crumbs and cook 1 to 2 additional minutes, uncovered.
