Ingredients/Components

  • milk - 2 c
  • salt - 1 tsp
  • butter - 2 Tbsp
  • water - 1 c
  • toasted almonds - 1 item
  • clove garlic, minced - 1/2 item
  • chopped onion - 1 c
  • salt and pepper - 1 item
  • dry sherry - 1/2 c
  • light cream or half and half - 2 c
  • butternut squash - 2 lb

How to make winter squash soup:

Dice squash and simmer in water with salt until tender. Saute onion and garlic in butter. Liquify all ingredients in food processor. Add sherry; season to taste. Heat to serve. Garnish with almonds.
