Winter squash soup
Ingredients/Components
- milk - 2 c
- salt - 1 tsp
- butter - 2 Tbsp
- water - 1 c
- toasted almonds - 1 item
- clove garlic, minced - 1/2 item
- chopped onion - 1 c
- salt and pepper - 1 item
- dry sherry - 1/2 c
- light cream or half and half - 2 c
- butternut squash - 2 lb
How to make winter squash soup:
Dice squash and simmer in water with salt until tender. Saute onion and garlic in butter. Liquify all ingredients in food processor. Add sherry; season to taste. Heat to serve. Garnish with almonds.Recipe categories: American, Vegetables, Soups & stews.
