Winter squash muffins
Ingredients/Components
- cinnamon - 1 tsp
- salt - 1 tsp
- flour
- brown sugar - 3 Tbsp
- oil - 1/4 c
- baking powder - 2 tsp
- to 2 eggs, beaten - 1 item
- cooked, mashed, winter squash - 3/4 c
- cooked, mashed apple - 3/4 c
- finely grated peel of one lemon - 1 item
How to make winter squash muffins:
Preheat oven to 400°. Combine squash, apple, brown sugar, oil, egg and lemon peel. (If squash and apple are freshly cooked, let them cool before adding egg.) Sift flour, baking powder, cinnamon and salt. Fold into squash mixture. Pour into greased muffin tins. Bake 20 to 25 minutes.Recipe categories: Breads, Quick breads, Muffins.
