Ingredients/Components

  • baking powder - 3 tsp
  • peanut butter - 2 Tbsp
  • egg, beaten - 1 item
  • skim milk - 1 c
  • whole wheat flour
  • peanut oil - 2 Tbsp
  • ripe banana, peeled - 1 item

How to make whole wheat pancakes:

In a blender, mix together the egg, milk, oil, peanut butter and banana. In a separate bowl, mix together the flour and baking powder. Pour the contents of the blender into the bowl with the flour; stir only until mixed. Cook pancakes, turning only once. Serve with choice of toppings: pourable fruit, applesauce, honey, yogurt, cream cheese, syrup.

Suggestions: Make pancakes small; they are very filling. Also, zucchini (steamed and pureed) can be substituted for banana and peanut butter.
