Ingredients/Components

  • sugar - 2 c
  • vanilla - 1 tsp
  • chopped pecans - 1 c
  • pkg - 2 oz
  • eggs, separated - 4 item
  • confectioners sugar - 1 lb
  • buttermilk - 1 c
  • flaked coconut - 1 c
  • baking powder - 1 tsp
  • cake flour
  • butter 2 sticks - 1 c
  • Beat in egg yolks
  • white chocolate, melted over hot water - 1/4 lb

How to make white chocolate cake:

Cream together butter and sugar. Beat in egg yolks. Add vanilla and melted chocolate; mix well. Sift together cake flour and baking powder and add alternately to the creamed mixture with the buttermilk. Beat egg whites until stiff and fold into batter. Stir in nuts and coconut. Pour mixture into 3 well-greased 9-inch cake pans. Bake in 350° oven for 30 minutes or until cake tests done. When cool, frost with White Frosting.White Frosting:1/2 c. butter (1 stick)2 (3 oz.) pkg. cream cheese (at room temperature)1/4 lb. white chocolate, melted over hot water1 tsp. vanilla1 lb. confectioners sugar1 c. chopped pecans Beat together butter and cream cheese until fluffy. Add melted chocolate and vanilla. Beat until smooth. Gradually add confectioners sugar, beating until smooth. Stir in nuts. (Delicious and well worth the price of ingredients.)
