Ingredients/Components

  • oil - 1 Tbsp
  • onion, chopped - 1 item
  • clove garlic, minced - 1 item
  • cumin - 1 tsp
  • whole chicken breasts, cut into small cubes - 2 item
  • can white kidney beans cannellini, drained - 1 oz
  • can garbanzo beans, drained - 1 1/2
  • can whole corn - 1 oz
  • cans chopped green chilies - 2 oz
  • chicken bouillon cubes - 2 item
  • hot pepper sauce - 1 item
  • parsley sprigs - 1 item
  • shredded Monterey Jack cheese - 1/4 lb

How to make white chili:

Saute in oil the onion, garlic and cumin until tender. Into a 2 1/2-quart casserole, combine onion mixture with chicken, beans, corn, chilies and bouillon. Add 1 1/2 cups water. Cover. Bake 50 to 60 minutes at 350°. Stir in hot pepper sauce and top with cheese.
