Ingredients/Components
- milk - 1/4 pt
- flour - 1 c
- cheese - 8 oz
- salt and pepper - 1 item
- made mustard - 1 tsp
- butter or substitute - 1 oz
- to 6 slices of toast - 4 item
- beer or ale or Worcestershire sauce - 1 Tbsp
- butter for toast - 1 item
How to make welsh rarebit:
Heat the butter in a saucepan; stir in the flour and cook steadily for several minutes, then gradually add the cold milk. Bring to the boil and cook until smooth and thick. Add the mustard, salt, pepper, most of the cheese and the beer. Heat steadily without boiling too quickly until cheese has melted. Spread over the buttered toast. Sprinkle with remainder of the cheese and brown under a hot grill. Serve at once.A Gouda or Edam type cheese makes a soft, creamy Welsh Rarebit or use Cheddar.
