Ingredients/Components

  • pounds ground meat - 2 item
  • eggs - 2 item
  • teaspoon basil leaves - 1/4 item
  • teaspoon salt - 1/2 item
  • teaspoon garlic - 1/2 item
  • tablespoons onion - 2 item
  • cup parsley - 1/3 item
  • cup Italian breadcrumbs - 1/2 item
  • Noodles:6 eggs
  • cup flour - 1 item
  • 1/2 cups bread crumbs - 1 item
  • cup Parmesan Cheese - 1/2 item
  • quarts chicken broth - 2 item
  • quart water - 1 item
  • packages spinach - 2 item

How to make wedding soup:

Noodles:6 eggs1 cup flour1 1/2 cups bread crumbs1/2 cup Parmesan Cheese2 quarts chicken broth1 quart water2 packages spinach Meatballs: Mix all ingredients well. Shape into tiny meatballs. Place on cookie sheet lined with tin foil and bake for 30 - 45 minutes at 350°. Best if made the day before making the rest of the soup.

Bring to boil the broth and water and add meatballs and spinach. Let boil while making noodles (or if you prefer, you can use store-bought noodles).

For homemade noodles, use a ricer to add noodles to boiling soup. (It helps to have an extra pair of hands.) For store-bought noodles, just add to boiling soup. Cook for 5 minutes or until noodles are tender.
