Ingredients/Components
- sugar - 4 lb
- cinnamon - 1 item
- vinegar - 1 c
- cloves - 1 item
- melon rind free of red and peeled - 1 item
- sweet pickling spices - 1 item
How to make watermelon rind pickles:
Cover rinds with water and boil until clean. Drain thoroughly. Boil vinegar, sugar and spices wrapped in cheesecloth ball. Boil until clean, stirring occasionally. Pour over rinds. Each day for 9 days, drain syrup, bring to a boil and pour over rinds. On the 10th day, put in jars and process.Recipe categories: Lunch/snacks, Appetizers, Melons.
