Watermelon pickles
Ingredients/Components
- sugar - 5 lb
- salt - 3 Tbsp
- cold water - 1 pt
- cider vinegar - 1 qt
- oil of cloves - 1/2 tsp
- whole peppercorns - 2 Tbsp
- piece ginger root - 1 item
- oil of cinnamon - 1/2 tsp
How to make watermelon pickles:
First Day: Make a brine of 3 tablespoons salt and 1 gallon cold water. Prepare rind by removing all green and red. Let stand in brine 24 hours.Second Day: Remove peel from brine and put into clear boiling water and let boil until tender (1 1/2 to 2 hours). Skim out and drop into ice water. Boil remaining ingredients briskly for 30 minutes before adding chilled rind. Boil rind 30 minutes and let stand overnight.
Third Day: Add large bottle maraschino cherries. Bring to boil. Seal in jars while hot. Let stand for one month.
