  • salt - 1 tsp
  • lemon juice - 1/4 c
  • honey - 1 Tbsp
  • sweet basil - 1 item
  • raw cashews - 3/4 c
  • to 2 bunches watercress - 1 item
  • avocado per serving - 1/2 item
  • Cashew Mayonnaise - 1 item
  • paprika or pimento strips for garnish - 1 item
  • Top with half an avocado

How to make watercress and avocado salad:

Make a bed of watercress sprigs on individual salad plates. Top with half an avocado. Fill the avocado with generous dollop of Cashew Mayonnaise with sweet basil. Sprinkle with paprika or use pimento strips for garnish.Cashew Mayonnaise:1 1/4 c. boiling water3/4 c. raw cashews1 Tbsp. honey1 tsp. salt1/4 c. lemon juice Liquefy all ingredients, except lemon juice, until creamy-smooth. Briefly whiz in lemon juice at last. Yields 1 pint.

Due to the boiling water, the cashews are somewhat cooked, thus having more thickening properties. So less cashews can be used and the mayonnaise does not separate.

This mayonnaise is still very low in natural fat. It has only a fraction more than one teaspoon for each tablespoon mayonnaise.
