Watercress soup
Ingredients/Components
- butter - 1 Tbsp
- light cream - 1/2 c
- pepper - 1/4 tsp
- can chicken broth - 1 3/4
- sliced celery - 1/4 c
- sliced green onions and tops - 1/3 c
- instant potato flakes - 1/3 c
- snipped watercress - 1/2 c
How to make watercress soup:
Melt butter, cook and stir onions and celery in butter until onions are tender. Stir in chicken broth. Heat to boiling. Reduce heat. Simmer until celery is tender, about 5 minutes. Stir in watercress and potato flakes. Heat just until watercress is wilted, about 2 minutes. Remove from heat; cool slightly. Pour watercress mixture in blender and blend until smooth.
