Watercress soup
Ingredients/Components
- water - 1 c
- stick butter - 1/2 item
- chicken broth - 2 3
- salt and pepper to taste - 1 item
- minced onion - 1 Tbsp
- hot pepper sauce to taste - 1 item
- potatoes, peeled and quartered - 1 lb
- whipping cream or half and half - 1 c
- bunches watercress, washed and dried - 2 item
How to make watercress soup:
Cook potatoes in salted water for 25 minutes. Drain and put aside. Peel leaves off of the watercress. Cook in a pan of 2 cups of water for 8 to 10 minutes on medium to low heat. Drain well.Puree broth, watercress and potatoes in large saucepan. Heat and add cream, salt and pepper. Add hot pepper sauce to taste.
