Ingredients/Components

  • water - 1 c
  • stick butter - 1/2 item
  • chicken broth - 2 3
  • salt and pepper to taste - 1 item
  • minced onion - 1 Tbsp
  • hot pepper sauce to taste - 1 item
  • potatoes, peeled and quartered - 1 lb
  • whipping cream or half and half - 1 c
  • bunches watercress, washed and dried - 2 item

How to make watercress soup:

Cook potatoes in salted water for 25 minutes. Drain and put aside. Peel leaves off of the watercress. Cook in a pan of 2 cups of water for 8 to 10 minutes on medium to low heat. Drain well.

Puree broth, watercress and potatoes in large saucepan. Heat and add cream, salt and pepper. Add hot pepper sauce to taste.
