- celery, chopped - 1/2 c
- small onion, sliced thin - 1 item
- pepper - 1 item
- rice - 2 tsp
- tomato paste - 2 Tbsp
- carrots - 3 item
- oil - 4 Tbsp
- salt - 1 tsp
- tomatoes - 2 c
- water - 2 c
- chopped parsley - 1 item
How to make vegetable soup:
Prepare vegetables and cut in cubes. Cook celery and onions slowly in oil for 10 minutes. Add remaining ingredients and boil until vegetables are soft, about 1 hour. Add more water, if needed.Recipe categories: < 4 hours, Weeknight, Soups & stews.
