Twice baked potatoes
Ingredients/Components
- eggs - 2 item
- butter - 4 Tbsp
- dash of salt - 1 item
- whipping cream - 4 Tbsp
- dash of pepper - 1 item
- shredded Cheddar cheese - 3/4 c
- baking potatoes - 4 item
How to make twice baked potatoes:
Bake potatoes at 375° for about 1 hour or until soft. Cut a thin slice off the top of each potato. Scoop out the pulp and put into a bowl. Separate eggs; add yolks to the potato pulp. Blend until smooth. Add butter and cream. Season with salt and pepper. Beat egg whites until stiff peaks form. Fold into potato mixture. Fill shells with mixture. Sprinkle with cheese.
