Ingredients/Components
- vegetable oil - 2 Tbsp
- cider vinegar - 2 Tbsp
- chopped onion - 2/3 c
- chicken broth - 6 c
- ground turkey - 1/2 lb
- minced fresh parsley - 1/2 c
- medium zucchini, sliced - 1 item
- dried oregano - 1 tsp
- garlic cloves, minced - 2 item
- dried basil - 1 tsp
- 10 oz - 1 pkg
- salt, optional - 1/2 tsp
- kidney beans, rinsed and drained - 1 can
- cooked elbow macaroni - 1-1/2 c
- hot Italian turkey sausage links, casings removed - 1/2 lb
- each Italian stewed tomatoes - 2 cans
- Pinch pepper - 1 item
How to make turkey minestrone:
In a large kettle over medium heat, saut?© onion in oil until tender, about 4 minutes. Add the next 6 ingredients; cook until meat is no longer pink. Add tomatoes, broth, zucchini and mixed vegetables. Cover and cook on low heat for 5 minutes. Add beans, macaroni, vinegar, salt and pepper; simmer for 3 to 4 minutes or until heated through. Yield: 16 servings (4 quarts).Diabetic Exchanges: 1 starch, 1 meat, 1 vegetable.
