Ingredients/Components

  • water
  • ground turkey - 1 lb
  • potatoes - 2 item
  • diced celery - 1/2 c
  • onion - 1 item
  • barley - 1 c
  • chopped broccoli - 1/2 c
  • large carrots - 2 item
  • turnips - 2 item
  • chopped bok choy - 1/2 c

How to make turkey-barley soup:

In a large saucepan with 2 1/2 cups of water, add barley. Season to taste and cook about 45 minutes. Brown turkey; set aside. (Make into balls, seasoned to taste and mixed with 1 egg.) When barley has cooked for 45 minutes, add all the ingredients except turkey and cook until veggies are cooked lightly, about 20 minutes. Add turkey balls and simmer for about 30 minutes. More water may be added if too thick. Serve with hot corn bread.
