Tomato tortellini soup
Ingredients/Components
- chopped onion - 1/2 c
- bay leaf - 1 item
- chopped fresh spinach - 2 c
- plus 1 tsp - 1 Tbsp
- dried oregano - 1 tsp
- garlic cloves, minced - 2 item
- dried basil - 1 tsp
- chopped carrot - 1 c
- low-sodium chicken broth - 2 c
- cheese tortellini - 2 c
- canned tomatoes in thick puree, chopped - 4 c
How to make tomato tortellini soup:
In a large saucepan, heat oil. Add carrot, onion and garlic. Cook, stirring frequently, 4 to 5 minutes. Stir in basil, oregano and bay leaf. Cook 1 minute longer. Stir in tomatoes, broth and 2 cups water. Simmer 15 minutes.Meanwhile, cook the tortellini. Drain. Stir tortellini and spinach into soup. Simmer 5 minutes longer.
