Tomato chutney
Ingredients/Components
- salt - 1 tsp
- vegetable oil - 4 Tbsp
- ginger - 3/4 tsp
- raisins - 2/3 c
- medium onion, finely chopped - 1 item
- cayenne - 1 tsp
- mustard seed - 1 tsp
- pitted dates - 3/4 c
- currants - 2/3 c
- can peeled tomatoes, chopped - 1 item
How to make tomato chutney:
Place all ingredients except mustard seed and oil in a saucepan and bring to boil, stirring occasionally. Reduce heat; simmer, uncovered, until mixture is thick, 1 1/2 to 2 hours.Fry mustard seeds in oil. Cover pan because the seeds will pop. After they stop popping, add to chutney and mix. Serve cool. Makes 1 1/2 pounds.
