Hot or cold vegetable frittata
Ingredients/Components
- pkg - 2 oz
- salt - 1 tsp
- eggs, beaten - 6 item
- vegetable oil - 3 Tbsp
- clove garlic, minced - 1 item
- chopped onions - 3/4 c
- chopped green pepper - 3/4 c
- shredded Cheddar cheese - 2 c
- black pepper - 1/4 tsp
- chopped zucchini
- half and half cream - 1/4 c
- chopped fresh mushrooms
- slices whole wheat bread, cubed - 4 item
How to make hot or cold vegetable frittata:
Preheat oven to 350° and lightly grease a 9 x 13 baking dish. In a large skillet, heat oil over medium heat. Add zucchini, mushrooms, onions, green pepper and garlic. Saut?© until tender. Remove from heat and let cool slightly.In a large bowl, beat together the eggs and cream. Stir in cream cheese, Cheddar cheese, bread crumbs and saut?©ed vegetables. Season with salt and pepper. Mix well and pour into baking dish. Bake for one hour or until the center is set. Serve hot or cold.
