Ingredients/Components

  • pkg - 2 oz
  • salt - 1 tsp
  • eggs, beaten - 6 item
  • vegetable oil - 3 Tbsp
  • clove garlic, minced - 1 item
  • chopped onions - 3/4 c
  • chopped green pepper - 3/4 c
  • shredded Cheddar cheese - 2 c
  • black pepper - 1/4 tsp
  • chopped zucchini
  • half and half cream - 1/4 c
  • chopped fresh mushrooms
  • slices whole wheat bread, cubed - 4 item

How to make hot or cold vegetable frittata:

Preheat oven to 350° and lightly grease a 9 x 13 baking dish. In a large skillet, heat oil over medium heat. Add zucchini, mushrooms, onions, green pepper and garlic. Saut?© until tender. Remove from heat and let cool slightly.

In a large bowl, beat together the eggs and cream. Stir in cream cheese, Cheddar cheese, bread crumbs and saut?©ed vegetables. Season with salt and pepper. Mix well and pour into baking dish. Bake for one hour or until the center is set. Serve hot or cold.
