Sweet potato muffins
Ingredients/Components
- vanilla - 1 tsp
- chopped pecans - 1/3 c
- packed brown sugar - 3/4 c
- milk - 1 c
- butter or margarine - 1/4 c
- salt - 1/2 tsp
- flour - 1 c
- baking powder - 1 tsp
- baking soda - 1/2 tsp
- vegetable oil - 1/2 c
- egg, beaten - 1 item
- ground cinnamon - 1 tsp
- ground nutmeg - 1/2 tsp
- regular oats, uncooked
- cooked, mashed sweet potato - 1 c
How to make sweet potato muffins:
Topping:1/4 c. regular oats, uncooked1/4 c. flour1/4 c. packed brown sugar1/4 c. chopped pecans1 tsp. ground cinnamon1/4 c. butter or margarine Mix first 7 ingredients. Combine sweet potato and next 5 ingredients; stir well. Add sweet potato mixture to oat mixture, stirring just until dry ingredients are moistened. Stir in pecans. Spoon batter into greased and floured muffin tins, filling 3/4 full.Prepare topping: Mix first 5 ingredients in a small bowl; stir well. Cut in butter with pastry fork until mixture resembles coarse meal. Sprinkle topping over batter. Bake at 400° for 15 minutes or until pick inserted in center comes out clean. Remove from pans immediately. Makes approximately 18 muffins.
