Sweet potato crisps

- vegetable oil for deep frying - 1 item
How to make sweet potato crisps:
Using vegetable peeler, cut potatoes into paper thin strips. In a 12-inch skillet over medium heat or in an electric skillet, heat 1-inch vegetable oil to 400° (see note). Drop handful of potato strips into hot oil; fry about 2 minutes until crisp and golden. Using slotted spoon, remove to paper towels to drain. Repeat with remaining potatoes. Sprinkle lightly with salt to serve. Makes 6 servings. Per Serving: 316 calories, 2 grams protein, 19 grams fat and 36 grams carbohydrates.Note: If desired, sweet potatoes can be baked for only 195 calories per serving. Heat oven to 400°. Spread potatoes in large jelly-roll pan. Toss with about 2 tablespoons vegetable oil. Bake 15 minutes, turning occasionally, until lightly browned and crisp. Sprinkle lightly with salt.
