Ingredients/Components

  • sugar - 1 c
  • eggs - 2 item
  • chopped pecans - 1 c
  • milk - 1/4 c
  • vanilla extract - 1 tsp
  • self-rising flour - 1/2 c
  • margarine - 1/2 c
  • can crushed pineapple, drained - 1 oz
  • can Angel Flake coconut - 1 1/2
  • cooked, mashed sweet potatoes - 3 c
  • Stir in pineapple and coconut

How to make sweet potato casserole:

Combine first 6 ingredients in a mixing bowl; beat until creamy. Stir in pineapple and coconut. Pour mixture in a lightly greased baking dish. Sprinkle with topping.Topping:1 c. firmly packed light brown sugar1/2 c. self-rising flour1/2 c. margarine1 c. chopped pecans Combine all ingredients, mixing well. Sprinkle over sweet potato casserole. Bake at 350° for 30 minutes.
