Ingredients/Components

  • milk - 2 Tbsp
  • salt - 1/4 tsp
  • brown sugar - 3/4 c
  • butter - 1/4 c
  • grated lemon rind - 1/2 tsp
  • crushed cornflakes - 1/2 c
  • marshmallows - 8 item
  • cooked sweet potatoes - 3 c

How to make sweet potato balls:

Mash potatoes, add butter, sugar, milk, salt and lemon rind; blend well. Scoop some and put a marshmallow into it. Shape into a ball. Roll in crushed cornflakes. Place in a buttered baking dish and bake 20 minutes at 375°. Serves 4.
