Sweet pickles



  • sugar - 6 qt
  • salt - 1 item
  • vinegar - 2 qt
  • alum - 1 item
  • celery seed - 2 Tbsp
  • stick cinnamon - 1 item
  • mustard seed - 2 Tbsp
  • bushel cucumbers - 1/2 item

How to make sweet pickles:

Wash and put cucumbers in a crock with salt water strong enough to float an egg. Let stand 1 week. Drain; add boiling water to cover. Let stand overnight. Drain. Cut cucumbers into slices. Add alum the size of an egg. Cover with boiling water and let stand overnight. Drain, then make a syrup of sugar, vinegar and the spices. Heat to boiling. Pour over pickles; drain. Repeat 3 mornings. Put pickles in jars. Cover with hot syrup and cold pack for 10 minutes.
