  • sugar - 4 c
  • salt - 1/4 tsp
  • water - 1 c
  • vinegar - 2 c
  • alum - 1/2 tsp
  • celery seed - 1 Tbsp
  • whole cloves - 1 Tbsp
  • mustard seed - 1 Tbsp
  • sticks cinnamon - 2 item
  • peck tomatoes - 1 item

How to make green tomato pickles:

Slice tomatoes; soak overnight, using 1/4 cup salt to 1 gallon water. Drain well; cover with boiling water to which 1/2 tablespoon alum has been added. Let stand 20 minutes. Drain. Cover with cold water. Drain. Mix spices, vinegar, sugar and water together. Bring to a boil; add tomato slices and again, bring to a boil. Place in hot sterile jars. Seal. Yields 10 pints.
