Ingredients/Components

  • salt - 1 tsp
  • eggs, beaten - 2 item
  • grated Parmesan cheese - 1/2 c
  • dash of pepper - 1 item
  • chopped parsley - 3 Tbsp
  • Mozzarella cheese - 4 oz
  • small onion, minced - 1 item
  • medium zucchini - 6 item
  • bulk Italian sausage - 1 lb
  • soft breadcrumbs about 6 slices, cubed - 3 c
  • spaghetti sauce homemade or store brand - 1 item

How to make stuffed zucchini:

Brown sausage. Wash zucchini; cut off ends. Do not peel. Cook in boiling, salted water for 5 minutes. Halve lengthwise and remove pulp with spoon. Combine pulp, bread crumbs, sausage, cheese, onion, parsley, salt, pepper and eggs. Fill zucchini shells and top with sauce and Mozzarella cheese. Bake at 350° for 30 minutes.
