  • eggs - 3 item
  • sugar - 2 c
  • vanilla - 3 tsp
  • raisins - 1/2 c
  • chopped walnuts - 1 c
  • grated zucchini - 2 c
  • oil - 1 c
  • flour - 3 c
  • baking powder - 1 tsp
  • baking soda - 1 tsp
  • salt - 1 tsp
  • cinnamon - 3 tsp
  • can crushed pineapple, drained - 1 oz

How to make zucchini pineapple bread:

Beat eggs until fluffy. Add oil, sugar, vanilla and zucchini. Mix well. Add dry ingredients and mix well. Add raisins, pineapple and nuts. Blend.

Bake in greased and floured Bundt pan at 325° for about 1 hour and 20 minutes. (Or use 2 greased and floured bread pans for 1 hour.)
