Stuffed zucchini
Ingredients/Components
- salt - 1/2 tsp
- oleo - 1 Tbsp
- chopped onion - 1/2 c
- bread crumbs - 2 Tbsp
- oregano - 1/2 tsp
- hamburger - 1/2 lb
- can tomato soup - 1 item
- slices Mozzarella cheese - 2 item
- medium zucchini - 2 item
- medium garlic, minced - 1 item
How to make stuffed zucchini:
Cook onion, garlic and oregano in oleo until tender; stir in soup. Cut zucchini lengthwise, scoop out pulp and seed, leaving 1/4-inch shell. Chop pulp and seeds. Brown meat, add 1/4 cup sauce, pulp, bread crumbs and salt. Spoon into shell and put in baking dish. Pour on remaining sauce. Cover, bake at 350° for 40 minutes. Uncover.
