Stuffed mushrooms
Ingredients/Components
- large mushrooms - 12 item
- butter - 1/4 c
- dried basil leaves - 1 tsp
- salt - 1/4 tsp
- whipping cream - 1/2 c
- parmesan cheese - 1/4 c
- cherry tomatoes - 1 item
- parsley sprigs - 1 item
How to make stuffed mushrooms:
Remove stems from mushrooms, chop into 1/4 inch pieces. Set aside. Heat butter in heavy skillet, add mushrooms caps. Saut?© quickly over high heat for 30 seconds on each side or until just browned.Transfer mushroom caps to heat proof serving tray with bottom sides up. Add mushroom stems to skillet and saut?© over high heat, about 2 minutes. Add basil, salt and cream. Heat to boiling and cook until cream is reduced by half and slightly thickened. Stir in parmesan cheese.
Stir mixture into mushroom caps, dividing evenly. Place mushrooms under broiler, about 6 inches from heat until lightly browned. Transfer to serving platter and garnish with cherry tomatoes and parsley. Serves 12.
