Stuffed mushrooms



Ingredients/Components
- butter - 2 Tbsp
- garlic powder - 1 tsp
- bread crumbs - 2 Tbsp
- grated Parmesan - 1 Tbsp
- chopped parsley - 1/2 Tbsp
- Salt and pepper to taste - 1 item
- bunch spinach - 1/4 item
- large mushrooms, stems removed - 10 item
- cup finely chopped onion - 1/4 item
- cup finely chopped mushroom stems - 1/4 item
- shredded Mozzarella - 2 Tbsp
How to make stuffed mushrooms:
Wash and clean mushrooms and pat dry. Save stems for later use. Thoroughly wash spinach; drain and finely chop. Melt butter in skillet and cook mushrooms, cap-side down, until lightly browned. Remove mushrooms and drain any liquid from inside caps. Set aside. Cook onions and mushroom stems in same skillet until tender and water evaporates. Mix in garlic powder and Parmesan. Add spinach and salt and pepper and cook for 5 minutes, until spinach is completely wilted. Add breadcrumbs and parsley. Combine well. Let cool for a few minutes then stir in the Mozzarella. Stuff filling into mushrooms and bake in hot 400°F. oven for 8-10 minutes, or until tops just start turning golden.Recipe categories: Appetizers, Side dish, Vegetables.
