Ingredients/Components

  • butter or margarine - 1/2 lb
  • light cream - 1 c
  • paprika - 1 item
  • Parmesan cheese - 3 Tbsp
  • lemon - 1 item
  • fresh dill - 1 item
  • seasoned stuffing mix - 1 pkg
  • fillets of flounder or sole - 8 item

How to make stuffed flounder:

In a saucepan, make stuffing according to instructions. Let cool for five minutes and set aside. Place fillets on a cutting board and place 1 tablespoon of stuffing in center. Fold fillet over stuffing and pin with a toothpick.

In a small saucepan, melt butter. Liberally pour over stuffed fillets, then wrap fillets in clear freezer wrap and freeze overnight.

In a greased pan, place frozen fillets and bake at 350° for 1/2 hour (covered tightly with aluminum foil). Remove foil and bake for an additional ten minutes until slightly browned.

Sauce: In skillet, warm cream and slowly add Parmesan cheese. Stir until it begins to thicken (Alfredo sauce). You can add a tablespoon of butter to sauce to help thicken.

Presentation: Place fillets on a serving dish on a bed of fresh spinach. Pour sauce down middle of fillets. Garnish with sprig of fresh dill and lemon twists. Sprinkle with paprika and salt and pepper. Serves 4. Approximate time is 50 minutes.

Stuffing Variations: Wild rice, crabmeat or shrimp can be added to stuffing.
