Stuffed chicken breasts
Ingredients/Components
- cornstarch
- water - 1 item
- margarine - 1 Tbsp
- dry white wine - 1/4 c
- fine dry bread crumbs - 1 Tbsp
- chopped parsley - 1 item
- Golden Delicious apples - 1/2 c
- whole chicken breast, skinned and boned - 1 item
- shredded low-cholesterol imitation Cheddar cheese - 2 Tbsp
How to make stuffed chicken breasts:
Flatten the chicken breasts between sheets of waxed paper to 1/4-inch thickness. Combine the apple, cheese and bread crumbs; divide between the chicken breasts. Roll up each chicken breast and secure with toothpicks. Melt the butter in a 7-inch skillet and brown the chicken in the butter. Add the wine and 1/4 cup water; cover and simmer for 15 to 20 minutes or until the chicken is no longer pink. Remove the chicken from the pan. Combine 1 tablespoon of water with the cornstarch and stir into the juices of the pan. Cook and stir until thickened.
