Stuffed bell peppers
Ingredients/Components
- garlic powder - 1 tsp
- ground turkey - 1/2 lb
- salt to taste - 1 item
- chopped parsley - 1/8 c
- cooked rice - 3/4 c
- shredded cheese - 8 oz
- can refried beans - 16 oz
- chunky salsa - 3/4 c
- diced red onion - 1/3 c
- can kernel corn, drained
- medium bell peppers - 4 item
- each: chili powder and ground cumin - 1/4 tsp
How to make stuffed bell peppers:
Cut bell peppers in half. Discard seeds and membranes. In large pot of boiling water, blanch peppers for 3 minutes. Invert to drain.In skillet or microwave, brown turkey with onion. Add remaining ingredients and cook until mixture is hot and bubbly. Place peppers in 13 x 9 x 2-inch pan. Stuff with bean mixture. Sprinkle with shredded Cheddar or Jack cheese. Bake covered in 350° oven for 35 to 40 minutes.
