Ingredients/Components
- butter - 2 Tbsp
- beaten eggs - 2 item
- chopped onion
- chopped green pepper - 1 Tbsp
- salt and pepper to taste - 1 item
- dry bread crumbs - 1/2 c
- firm tomatoes - 6 item
- fresh chopped parsley - 1/2 c
How to make stuffed baked tomatoes:
Stuffing (prepare for each tomato):1 Tbsp. chopped onion1 Tbsp. chopped green pepper2 Tbsp. butter2 beaten eggs1/2 c. dry bread crumbs1/2 c. fresh chopped parsley salt and pepper to taste Scoop out the center of the tomatoes. Turn upside down on paper towels to drain for about 5 minutes. Brown onion and green pepper in butter. Add eggs, bread crumbs and parsley. Salt and pepper to taste. Stuff tomatoes with mixture.
