  • butter - 2 Tbsp
  • beaten eggs - 2 item
  • chopped onion
  • chopped green pepper - 1 Tbsp
  • salt and pepper to taste - 1 item
  • dry bread crumbs - 1/2 c
  • firm tomatoes - 6 item
  • fresh chopped parsley - 1/2 c

How to make stuffed baked tomatoes:

Stuffing (prepare for each tomato):1 Tbsp. chopped onion1 Tbsp. chopped green pepper2 Tbsp. butter2 beaten eggs1/2 c. dry bread crumbs1/2 c. fresh chopped parsley salt and pepper to taste Scoop out the center of the tomatoes. Turn upside down on paper towels to drain for about 5 minutes. Brown onion and green pepper in butter. Add eggs, bread crumbs and parsley. Salt and pepper to taste. Stuff tomatoes with mixture. Bake at 350° for 30 minutes.
