Ingredients/Components

  • pkg - 2 oz
  • butter - 3 Tbsp
  • small onion, chopped - 1 item
  • mushrooms, sliced - 1/4 lb
  • eggs - 4 item
  • bread crumbs - 1/4 c
  • can condensed cream of mushroom soup - 1 item
  • grated Parmesan cheese - 1/4 c
  • pepper - 1/8 tsp
  • basil - 1/8 tsp
  • oregano - 1/8 tsp

How to make spinach squares:

Place spinach in a strainer; rinse under hot water to thaw, then press out all water. Set aside. Melt butter in frying pan over medium heat; add onion and mushrooms. Cook, stirring, until onion is limp. In a bowl, beat eggs with a fork, then stir in bread crumbs, mushroom soup, 2 tablespoons of the cheese, pepper, basil, oregano, spinach and onion until blended. Turn into a well-greased 9-inch square pan with remaining cheese. Bake, uncovered, in a 325° oven for 35 minutes, or until set when lightly touched. Cool slightly, then cover and refrigerate. Serve cold or warm.
