  • nutmeg - 1/4 tsp
  • large eggs - 2 item
  • pepper - 3/4 tsp
  • dry white wine - 3/4 c
  • Ricotta cheese - 1 (8
  • cooked rice - 2 c
  • minced shallots - 1/4 c
  • tarragon - 2 tsp
  • chopped mushrooms
  • chopped frozen spinach, thawed - 2 pkg
  • sheet frozen puff pastry, thawed - 1 item

How to make spinach pie:

Saute mushrooms, shallots and 1/4 teaspoon nutmeg until juices evaporate, 10 to 12 minutes. Add 1/4 cup wine. Stir often about 3 minutes. Remove from heat. Add rest of wine. Set aside.

Squeeze liquid from spinach. Combine with rice, 1 egg, tarragon, nutmeg and pepper. Pat half in an oiled, 9-inch casserole pan. Spread Ricotta cheese on top. Pour mushroom mixture over that. Cover with rest of spinach mix.

Lay pastry on top, trim to fit. Brush well. Cook at 325° until top is golden brown, 35 to 40 minutes. Serve with sour cream and lemons.
