Ingredients/Components

  • salt - 1/2 tsp
  • flour - 2 Tbsp
  • butter - 4 Tbsp
  • evaporated milk - 1/2 c
  • pepper - 1/2 tsp
  • Worcestershire sauce - 1 tsp
  • garlic salt - 3/4 tsp
  • chopped onion - 2 Tbsp
  • celery salt - 3/4 tsp
  • red pepper to taste - 1 item
  • frozen, chopped spinach - 2 pkg
  • roll jalapeno cheese - 6 oz
  • vegetable liquor - 1/2 c

How to make spinach madeline:

Cook spinach; drain and save liquid. Melt butter over low heat. Add flour, stirring until blended, but not brown. Add onion and cook until soft, but not brown. Add liquid slowly, stirring constantly, to avoid lumps. Cook until smooth and thick; continue stirring. Add seasoning and cheese which has been cut into small pieces. Stir until melted. Combine with cooked spinach. Put into a casserole topped with buttered bread crumbs. Keep in refrigerator overnight. (Also may be frozen.) Warm for 30 minutes at 350°. Serves 5 to 6.
