  • grated Parmesan cheese - 1/2 c
  • chopped onion - 1/4 c
  • salt and pepper to taste - 1 item
  • can tomato paste - 1 item
  • lean ground beef - 1 lb
  • Mozzarella cheese, divided - 3 c
  • egg, lightly beaten - 1 item
  • dried parsley flakes - 1/2 tsp
  • dried oregano - 1/2 tsp
  • grated Romano cheese - 3 oz
  • can mushroom stems and pieces, drained - 1 item
  • frozen chopped spinach, thawed and squeezed dry - 1 pkg
  • each spaghetti sauce - 2 jars
  • curd cottage cheese - 1 lb
  • sliced pepperoni optional - 3 oz
  • cooked lasagna, rinsed and drained - 8 oz

How to make spinach lasagna:

Cook beef in large skillet over medium high heat until browned, stirring to separate meat; drain fat. Add spaghetti sauce, tomato paste, mushrooms, onion and seasonings. Bring to a boil, stirring constantly; set aside. Combine cottage cheese, 1 cup Moz
