Spinach lasagna
Ingredients/Components
- butter, softened - 1/2 c
- eggs - 2 item
- pkg - 2 oz
- grated Parmesan cheese - 1 c
- cottage cheese - 2 lb
- lasagna noodles, cooked and drained - 8 oz
- Monterey Jack cheese, grated - 1 lb
- salt, pepper and garlic powder to taste - 1 item
- chopped fresh parsley or 1 tsp - 1 tsp
How to make spinach lasagna:
Cook noodles according to package directions; drain. Cook spinach according to package directions; drain. Mix cottage cheese, eggs, parsley, butter, salt, pepper and garlic powder in bowl. Grease lasagna pan or 13 x 9 x 2-inch rectangular baking dish. Place layer of noodles in pan followed by layers of cottage cheese mixture, Monterey Jack cheese, spinach and Parmesan cheese. Repeat layers. Bake in a 350° oven for 30 minutes.Recipe categories: Main dish, Casseroles, One Dish meal.
