Spiced zucchini bread
Ingredients/Components
- sugar - 2 c
- cinnamon
- eggs - 3 item
- vanilla - 2 tsp
- salt - 1 tsp
- flour - 3 c
- soda - 2 tsp
- baking powder - 1/2 tsp
- vegetable oil - 1 c
- can crushed pineapple, drained - 8 oz
- finely chopped nuts - 1 c
- coarsely shredded zucchini - 2 c
How to make spiced zucchini bread:
Combine flour, soda, salt, baking powder, cinnamon and nuts. Set aside. Beat eggs lightly in a large mixing bowl. Add sugar, oil and vanilla. Beat until creamy. Stir in zucchini and pineapple. Add dry ingredients and stir until moistened. Bake at 350° for 1 hour in two 9 x 5 x 3-inch loaf pans.Recipe categories: Breads, American, Southern u.s..
