Spiced zucchini bread
Ingredients/Components
- sugar - 2 c
- cinnamon
- eggs - 3 item
- vanilla - 2 tsp
- salt - 1 tsp
- soda - 2 tsp
- baking powder - 1/2 tsp
- vegetable oil - 1 c
- plain flour - 3 c
- can crushed pineapple, drained - 1 oz
- chopped pecans or walnuts - 3/4 c
- coarsely shredded zucchini - 2 c
How to make spiced zucchini bread:
Combine flour, soda, salt, baking powder, cinnamon and nuts; set aside. Beat eggs lightly in a large bowl; add sugar, oil and vanilla and beat until creamy. Stir in zucchini and pineapple. Add dry ingredients, stirring only until moistened. Spoon batter into 2 well-greased and floured 9 x 5 x 3-inch loaf pans. Bake at 350° for 1 hour.
