Spanish rice and chicken
Ingredients/Components
- salt
- paprika - 1 tsp
- garlic salt - 1 tsp
- chili powder
- chicken broth
- onion, chopped - 3/4 c
- tomatoes, chopped - 1 c
- green pepper, chopped - 3/4 c
- celery salt - 1 tsp
- uncooked rice
- fresh parsley, minced - 1/4 c
- , cut up - 1 broiler/fryer
How to make spanish rice and chicken:
Place chicken in a greased 13 x 9 x 2-inch baking pan. Combine garlic salt, celery salt and paprika. Sprinkle over chicken. Bake uncovered at 425° for 20 minutes. Remove chicken from pan.Combine rice, onion, green pepper and parsley. Spoon into the pan.
In a saucepan, bring broth, tomatoes, salt and chili powder to a boil. Pour over rice mixture; mix well. Place chicken pieces on top. Cover and bake for 45 minutes or until chicken and rice are tender. Yield: 4 to 6 servings.
