Southern spoon bread
Ingredients/Components
- milk - 3 c
- salt - 1 tsp
- baking powder - 2 tsp
- stick butter or oleo - 1/2 item
- cornmeal
- eggs, separated and beaten - 4 item
How to make southern spoon bread:
Heat 2 cups of milk to simmering. Add salt, cornmeal and butter to hot milk. Cook 10 minutes in double boiler. Cool to lukewarm; add baking powder dissolved in 1 cup of cold milk. Beat in egg yolks. Fold in stiffly beaten whites. Pour into deep buttered baking dish. Bake at 400° for 40 minutes or until knife comes out clean. Serve hot with butter or ham gravy.
