Southern grits casserole
Ingredients/Components
- butter or margarine - 3 Tbsp
- salt
- water
- eggs, beaten - 2 item
- pepper - 1/2 tsp
- shredded Cheddar cheese, divided
- quick cooking grits, uncooked - 1 c
How to make southern grits casserole:
Microwave the water on High until boiling in a 1 1/2 quart casserole or use the conventional range to boil. Add grits, butter, salt and pepper to the water. Cover with waxed paper. Microwave at High 5 minutes, stirring twice. Stir some of the hot grits into the beaten eggs. Stir in 1 cup of cheese and add egg-cheese mixture to grits. Stir well to mix. Microwave on High 5 minutes. Rotate dish 1/2 turn after 2 minutes. Sprinkle the reserved 1/2 cup cheese on top of mixture. Cover. Microwave on High 2 minutes or until cheese melts. Let stand 3 to 4 minutes before serving. Serve hot. Yield: 6 to 8 servings.Recipe categories: Breakfast, Grains, Casseroles.
